Quick, Healthy Breakfast

Greetings everyone,

We all have heard the saying “breakfast is the most important meal of the day” at one point or other in our lives. Whether that is true or not, who knows. For me personally, making a quick, light breakfast sets the tone for the rest of my day. I feel energized, happier and overall ready to start my day. Since I usually start work quite early, around 8am, I usually do not try to cook up anything complex. Lately, I have been obsessed with this easy to make Avocado Toast. 1 Slice bread-toasted (I recently discovered this wheat and gluten free bread at Ralph’s and decided to give it a go. My new go to bread)

1/2 Avocado(mashed)

2 eggs(can be cooked any style,  I prefer poached)

1 teaspoon goat cheese

1 teaspoon cut up dill.

A bit of black pepper


Simply spread half of the avocado on your choice of toasted bread.IMG_3774.JPG

Sprinkle black pepper. Add the cooked eggs. Top off with goat cheese and dill.

Cut it in half, make yourself a nice cup of tea or coffee(I prefer coffee with cream and sprinkled on top is a bit of cinnamon) and you have the perfect breakfast. Sit back, relax and start your day off right.
